Crab Salad with Tomatoes, Peppers and Cheese

Crab Salad with Tomatoes Peppers and CheeseCrab provides a great source of protein and is packed with vitamin B12 that boosts energy and mood.

  • 1 lb. tomatoes
  • 1 red bell pepper
  • 1/2 lb. cooked crab meat (or imitation crab)
  • 1/2 cup shredded, reduced-fat cheddar cheese
  • 2 Tbsp. fresh lemon juice
  • 1/2 tsp. pepper
  • 1/4 cup reduced-fat mayonnaise
  • 1/4 tsp. paprika

Dice tomatoes into large chunks. Cut bell pepper into 1-inch pieces. Combine tomatoes, bell pepper, crab, cheese, lemon and pepper. Combine mayonnaise and paprika. Serve salad garnished with mayonnaise mixture.

Makes 4 servings.
Per serving: 167 calories. Fat: 6.8 grams. Sodium: 411 milligrams. Fiber: 2.1 grams. Total Carbohydrates: 9.3 grams. Protein: 17.4 grams.
